Before Goa wakes up, the padeiro is already at the oven. The poi comes out dark and dense, crusted from fire, smelling of wheat and wood smoke. To understand why Goans queue for this at dawn - every dawn, without fail, is to understand something about how food becomes memory, and memory becomes home.
